Sourdough Chocolate Chia Pudding Scones 

I’m constantly trying to find recipes that help me use up my “discard” portion of my sourdough starter. I’m obsessed with pumpkin scones, but I also figured a bit of variety wouldn’t be a bad thing. I had some leftover chocolate chia pudding and it seemed like the perfect medium as a replacement for the pumpkin. I personally believe this one was a huge success and they’re absolutely fabulous.

The recipe, from start to finish, will take anywhere from 3-3.5 hours. That sounds insane, right? It’s for the pudding, which needs to “set” for some time (in the fridge) before use. However if you’ve already made it, then the time will take roughly 30-45 minutes. 

Once you’ve made the pudding you can get started! 

Start by combining all the dry ingredients in one bowl and the wet ingredients (except butter) in another. Your sourdough starter does not have to be recently fed, but definitely within the last 12-24 hours is probably best. 

Cube the butter and, using a pastry blender, mix it into the dry ingredients until it has a sand like texture. Now add in wet ingredients and mix (first with a spoon and then, when it starts to become more of a dough, by hand). You don’t want to over-mix the ingredients, so once it’s a cohesive ball try to minimize handling.

Now you need to shape the scones. This actually very easy. Cut the dough in half and make two small round disks, roughly 1-2″ thick. Slice the disks into eight pie pieces and put these on a baking sheet line with parchment paper (I place them like interlocking bricks). They will expand, a little, in baking, so you want to make certain they have a little bit of space between each (at minimum a finger width apart).

Now place these in the freezer and preheat your oven to 400 degrees Fahrenheit. Once the oven is heated place the scones in the oven and bake for about 20 minutes. 


Dry ingredients:
2 1/2 cups flour (300g)
1/2 cup sucanat (or brown sugar)
1 teaspoon cinnamon
1 tablespoon cocoa powder (unsweetened)
1 teaspoon cream of tartar 
1 teaspoon baking powder
1/2 teaspoon salt (no iodized salt)
1/2 cup butter (cold and cubed)

Wet Ingredients:
1 cup 100% hydration sourdough starter
1/2 cup chocolate chia pudding + 1 tablespoon 
2 teaspoon vanilla bean paste or extract

1 cup powdered sugar
1 teaspoon vanilla bean paste
2 tablespoons milk 


1. Line a baking sheet with parchment paper and set aside
2. In a large bowl combine all dry ingredients, except butter. In a separate bowl combine all the wet ingredients. 
3. Add butter to dry ingredients and, using a pastry blender (or two knives if you don’t have one), break down the butter until the whole mixture has a sandy like texture.
4. Add the wet ingredients to the dry ingredients and stir until combined. You’ll have to use your hands to make the dough into a cohesive mass. If the mass seems to be too dry you can add (a teaspoon at a time) some milk to make it more moist. 
5. Separate the ball of dough in half and shape these each into disks (4-5″ in diameter) and then cut each of these into 8 pie slices. Place these on the prepared lined baking sheet and place the whole tray in the freezer.
6. Preheat oven to 400 degrees Fahrenheit. Once the oven is preheated place the tray in the oven and bake for 20-25 minutes. 
7. While the scones are baking you can make the icing. Don’t combine everything at once, first mix the powdered sugar with the vanilla bean paste and then slowly add in the milk. I recommend doing it a teaspoon at a time, as it will quickly become very liquid-like. I prefer a thicker consistency, but this will harden on the scones (once cooled), so it’s all about your own preferences here. I don’t often make the icing and just enjoy the scones as they are. 


Chocolate Chia Pudding

I’ve gotten a recent obsession with chia seeds and I’ve been adding it to many of the things I eat. I started out with just adding it to my overnight oats, I love the tiny bit of crunch it adds.

A friend of mine gave me her recipe for chia pudding and she said she sometimes adds a scoop of chocolate powder, so of course I had to try that too. It’s seriously tasty and so simply delicious.


1/4 cup chia seeds
1 cup milk*
1/4 cup sugar**
1 teaspoon vanilla bean paste
1 Tablespoon Cocoa powder (unsweetened)

* I used cow milk, whole, because my son is allergic to peanuts and gets eczema with most other nuts, you could use any nut milk, rice milk, or coconut milk (I’m sure hemp and oat milk would work too)

** I used white sugar, but you can use any form of sweetener (sucanat, molasses, honey, etc)

Mix milk with sugar and vanilla bean paste, add in cocoa powder (which probably won’t mix in well). I heated it briefly in the microwave and then threw the mixture through a strainer. I stirred the chocolate paste that was left behind, until it was smooth, and then added it back into the milk. I then poured this over the chia seeds. Now it needs to sit in the fridge for about 2-3 hours. I do mine the night before I want to have it, so it goes in overnight. My friend does hers in a wide dish, I put mine in a mason jar (mostly because we have a side-by-side fridge and space is limited). Both methods work, but if you used a mason jar you will need to shake it a couple times. I find that the following morning I can shake or stir it and that’s enough.


Both kids have been going through some big emotions lately. We visited family (that’s about 3 hours drive north of us) for the Memorial Day weekend. We stayed in a hotel for 2 nights and the stopped at th nearby aquarium before heading home. We brought along their tablets, which they don’t often get to use at home, and they’ve kinda continued to use them since then. This past weekend it was very rainy and muggy out, so we didn’t really do much. All this, in combination with long car rides and a broken DVD player (my daughter stuffed a coin in the DVD slot) in the car (making the car rides very long and boring for them too). 

MMC has always been convinced that our kids are somehow abnormal and too loud/rambunctious. They, like most preschoolers and toddlers, have sometimes short attention spans and easily have big emotions when things don’t go their way. Apparently because of this (very normal) behavior, MMC is overly critical of the way that I’m raising them. I prefer a gentler approach and don’t think that talking down to them or saying “because I said so” is the right approach. Knowing the why and having choices (even when we set the parameters) empowers them and makes them feel involved  in their day to day activities. 

Anyway… I digress a bit. The whole point of this is that this past weekend it seemed to come to a head. Both kids were tired, feeling a bit over-stimulated, and missing out on their regular structured day. Both were on edge and both were either screaming or hitting the other. MMC was not convinced of the tired/hungry/over-stimulated and immediately stated that he believed it might be a parasite they picked up at one of their forest school outdoor activities. 
I swear… I don’t make this shit up… A parasite is causing our preschooler and toddler to have meltdowns. Yup, I think I’ve about heard it all… A parasite?!?!? Bwahahaha!!!!

One of those days…

So today was the big interview. Many things were prepared in order for things to work out with that. Some things didn’t work in our favor today, but in general things went very well and the kids had a great day too. I was going to stay at my friends house and have a mom’s night in with a group of other moms. The kids were exhausted after all the activities from today and we did everything possible to keep them awake until sleep time, which ended up being around 7pm. 

Both kids were asleep by 7:15 and I snuck downstairs to start cleaning up the mess/toys from the day. Forty-five minutes later both kids were awake and my son had a complete emotional overload. He wanted to go home and refused to go back to sleep. This also resulted in his sister waking up. I tried talking to him about staying, but I was very obvious that he wasn’t going to go back to sleep and that he wanted to be home. I decided to listen to his request. This was one of those decisions that I deeply believe are key to trust being developed with my children, that if there is something they truly feel needs to happen then I listen to them. I will never force them to do something they aren’t comfortable doing. 

Now we’re home and MMC is now making me feel even worse about the decision to come home and that we should’ve stayed, because he suffers from anxiety and he’s convinced that forcing our son to “deal” with it, rather than respect his request, is the way to help him get over it. I seriously can’t win with MMC most days lately.

Tonight I just can’t…

A little background: Tomorrow I have an interview for a part-time work-from-home financial position. The work would give us some extra income and it’s working for a not-for-profit organization I believe in (and run by moms too!). I have to physically interview for the position, so a friend of mine, who actually recommended me for the position, will be watching both kids. After the interview I’ll meet back at her house, where we’re having dinner and then a mom’s night in. I have to be in the neighborhood (with her) anyway the following day, so we’re all spending the night. 

Now for the story. I told MMC about the interview, he’s thrilled, and I told him about spending the night, he seems to think I’m weird. Tonight he came home at a semi-decent hour, and he was sitting at the dining room table eating my “scraped-together-at-the-last-minute-meal”, when he asked me the details of tomorrow. I told him that my friend will watch the kids and take them on an outing with her kids. He immediately rolled his eyes. I asked him what the eye roll was for. To which he responded “I can’t tell you because then you’ll tell the other people you talk to”. Okay… Stop the gosh darn truck! What the fuck is that supposed to mean?!  So now I’ve told my friend about this and I’m posting it here, because what he said is ducking stupid and it pisses me off that he can’t just tell me what he takes issue with. 

I don’t have any pretty picture to post with this (and to be honest, I think the words will be good enough). But seriously?! Does anyone else’s husband do this? 

Overnight oats – gingerbread Apple Raisin

My second attempt at my own recipe for overnight oats was, in my own opinion, very delicious. I made it again (it’s in the fridge right now and will be ready to eat tomorrow morning).

I love the taste of apples and cinnamon, but I love gingerbread even more. So… Why not combine the two? 

I’m not going to spend any more time talking about it and just post my recipe. Try it and let me know what you think.

The Recipe:
1/2 cup oats
1/4 cup Greek yogurt
1/4 cup applesauce (unsweetened)
1/4 cup water
1/4 cup milk
1/2 teaspoon cinnamon 
1/2 teaspoon ground ginger
1 tablespoon blackstrap molasses
1 tablespoon chia seeds
1 tablespoon raisins


Add all ingredients into a mason jar and shake until well combined. Place in fridge overnight and enjoy in the morning.

Overnight oats – Latte Coconut

I’m a little late to the overnight oats game, but I’ve found a new obsession that actually makes my life a zillion times easier. I never seem to find time, in the morning to both make and eat my breakfast. I love making hot oatmeal with cooked finely diced apples, cinnamon, and a dollop of my homemade Greek yogurt. But I either forget to make it in time or by the time I’ve made it I’ve run out of time to eat it… Overnight oats have simplified this and it’s ready when I want it.

My first attempt was a simple oats, yogurt, milk, applesauce, and cinnamon. I didn’t have any almond milk, so I used my 1% dairy milk.

The standard ratio for oats is 1/2 cup dry to 1 cup wet, so keeping that ratio in mind it’s pretty simple to come up with your own recipes. I searched Pinterest for some different recipes and couldn’t really find exactly what I wanted, so I made up my own.

My second attempted recipe was a chocolate fudge one, which I immediately adjusted. I used espresso powder and chia seeds, which adds a nice texture and great nutrition (fiber, protein, and omega-3 fatty acids to name a few).

The Recipe:
1/2 cup oats
1/2 cup yogurt (Greek if preferred)
1/2 cup coffee
1/4 cup milk (to account for thicker yogurt)
1 Tablespoon coconut flakes (sweetened, if desired)
1 tablespoon espresso powder
1 Tablespoon chia seeds
1 Tablespoon chocolate powder 
1 teaspoon vanilla extract

Place all ingredients into a mason jar (or bowl you can easily cover) and shake (stir) until fully combines. Place in fridge overnight and enjoy the next morning.
